I may be biased, but I think my mother is one of the best cooks out there. Her collard greens are delicious, her string beans are impeccable, and her chili is definitely a recipe you’d want to add to your own collection.
Oh, and don’t get me started on her seafood salad, which is a family recipe that I’ve been asked to keep inside the family. Let me tell you, it’s probably the best you’ll ever have and that’s an understatement.
When I was younger, my mother would invite me to watch her cook – occasionally giving me the role of her sous chef and sometimes even giving me the reigns to cook while she fed me the ingredients. It was an opportunity for us to bond, but also an opportunity for me to learn how to cook. Now, many of the meals I’ve cooked have been inspired by or are exact copies of my mother’s infamous ones.
One of these recipes include my mother’s tomato, onion and feta salad – a recipe she heard about in an Oprah magazine once, but modified on her own. In lieu of that, I decided recently to make the same recipe, making a few changes of my own. I am so excited to share this recipe with you that soon became one of my favorite salads to eat! One of my additions to this recipe is the rice vinegar. Usually, the recipe includes white vinegar, but one of the things I love about rice vinegar is that there’s a little sweetness to it, which compliments the flavors of the tomato, onion, and feta very well. I also use rice vinegar as as opposed to regular vinegar in my vinaigrettes, too, but I digress.
I think one of the additional things that make this recipe so sweet is the love behind it. One of the many admirable things about my mother is that she would prepare dinner for our family every night when I was living with my parents. Even if she had work that evening, she’d make sure to prepare something for us to eat. Now that she’s retired, she makes sure my dad has both breakfast, lunch, and dinner before heading off to work and whenever someone visits, she’s the first one whipping up a batch of something yummy for whoever is here. The ingredient behind each of my mother’s dishes has been and always will be love. She sacrifices so much time and effort out of love and does it almost without thinking. It’ a quality I hope to emulate and I think one of the irreplaceable ingredients that make her meals so much more delicious.
- 1 and 1/2 pack of cherry salad tomatoes
- 8oz feta cheese (to save time, purchase it already crumbled)
- 1 1/2 cup of red onion
- Rice vinegar
- Olive oil
- Large bowl
- Lid or plastic wrap
- Slice cherry tomatoes into halves. If you have a tomato that is larger than the rest, slice it into quarters.
- Dice the red onion
- Add tomatoes, diced red onion, and about 8oz of feta cheese to the bowl
- Pour 1 cup of olive oil over the tomato, red onion, and feta cheese inside of the bowl. Try to pour it all over it, if possible, so it's coated.
- Add 1/2 tsp of parsley and a 1/2 tsp of oregano.
- Pour 1 cup of rice vinegar into the bowl.
- Mix thoroughly.
- For best results, put salad in the fridge to soak in the flavor for at least an hour.
